Bellini’s are one of the easiest and most popular summer co*cktails out there and this Peach Bellini is no exception. A simple combination of delicious Prosecco, peach schnapps, and peach purée makes this one of my favorites for sipping on the deck.

I gave this one my own little spin to spruce it up a bit. In your blender, purée 2-3 peaches (without pits btw) with a splash of peach schnapps.

Peach Bellini

Originating in Venice, Italy, the Bellini is a popular co*cktail that is packed with peach flavor. This drink uses Prosecco which is a popular sparkling wine combined with a puree which we will be preparing as well. Peach schnapps is a good addition to give the entire drink a bit of an extra kick of flavor.

Mimosa or Bellini? What’s the difference?

A Mimosa is made from orange juice and Cointreau that you pour into a champagne flute and stir to mix. You then top the glass with chilled champagne or sparkling wine.

A Bellini, however, is made from peach puree, and schnapps and topped off with prosecco.

Preparing a Peach Bellini

To get started with this recipe, you’ll need a blender ready to go. You will also want a bag of frozen peaches. To begin, add a cup of frozen peach slices into your blender along with 1/2 cup of water. Blend it until it’s smooth.

Then add the peach schnapps and puree to each glass (see recipe card for amounts) and top with Prosecco.

Fresh or Frozen Peaches?

If you want to use fresh peaches, slice them up in advance and freeze them first. This removes the need to add ice to the drink and makes for an overall better taste.

Choosing the right Prosecco for your Peach Bellini

There are typically four types of Prosecco; Extra Brut, Brut, Extra Dry, and Dry. The confusion comes from the name not being indicative of the sweetness level. You won’t be able to tell from the label unless you know what you are looking for.

With Prosecco, the order of sweetness is from left to right so when you are choosing a Prosecco to pair with something like a Bellini, you’ll want to go with a Dry Prosecco as this will be the sweeter of the options whereas an Extra Brut would be the least sweet of the options. You can, of course, play around with each type if you plan to enjoy Bellinis regularly and see which one your tastes prefer but we recommend Dry for this particular recipe.

How to Avoid the Prosecco Foaming Over

One of the most common things to occur when pouring Prosecco into a co*cktail is the co*cktail tends to foam up. This is especially true for ones with frozen ingredients such as this one. To avoid excess foam, open your bottle of Prosecco a good 15 minutes or so before making the drinks and then place it in the fridge.

This brings the temperature closer to the level of the puree and will help prevent it from foaming over. Then, simply pour slowly allowing the ingredients to mix without creating a ton of foam.

Ingredients

Peach Puree

  • 1 cup peaches frozen
  • 1/2 cup water

Peach Bellini

  • 1/2 cup peach puree
  • 2 ounce Peach Schnapps
  • 8 ounces Prosecco

Instructions

Peach Puree

  • Combine 1 cup of frozen peaches and 1/2 cup of water in a blender.

  • Blend until smooth.

Peach Bellini

  • Add 1 ounce of peach schnapps and 1/4 cup of peach puree to each glass.

  • Top with Prosecco.

  • Serve.

    This looks like the perfect summer drink to me.

      I could not wait until summer to make this drink. We had a beautiful warm and sunny day in-between some chilly rainy days and this drink was so tasty and refreshing to toast the coming of spring.
